Mommy’s Meatballs

Around our house, almost everything is branded “Mommy’s” or “Daddy’s” based on who typically makes it.

  • Daddy’s ice cream (homemade ice cream)
  • Daddy’s eggs (hard boiled eggs)
  • Daddy’s pizza (Daddy’s pizza dough recipe)
  • Daddy’s ranch (homemade ranch), etc.
  • Mommy’s chicken nuggets (homemade chicken nuggets)
  • Mommy’s crackers (ranch seasoned oyster crackers)
  • Mommy’s meatloaf (self explanatory)
  • Mommy’s pizza (Mommy’s pizza dough recipe)
  • Mommy’s granola (homemade granola)

You get the idea.

Thus: Mommy’s Meatballs!

Homemade meatballs have been a staple in our kitchen this winter. Yet, I’ve been hesitant to write down the recipe for you.

Why?

I don’t measure anything when making Mommy’s Meatballs. But for you, I will try!


Mommy’s Meatballs

Ingredients

  • 1 lb ground pork
  • 1-1.5 lb ground beef
  • 1-2 eggs
  • 1/2 tsp salt (or more to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp Italian seasoning

Directions

Whisk the eggs in a small bowl.

In a large bowl, mix all of the ingredients together using a large fork, meat masher, or your (clean) hands until well combined.

Scoop or shape into meatballs using a scooping tool or your hands.

Tips

  • I typically flash freeze half of them on a baking sheet and prepare the other half of the meatballs for that day’s dinner.

  • Want these meatballs to versatile for any meal? Do not add the Italian seasoning and these meatballs will be ready to use with any sauce of your choosing.

For Immediate Use

Two Ways

  1. Boil the meatballs in your favorite sauce on the stove
  2. Place them in the slow cooker with your favorite sauce until the meatballs reach at least 160 degrees Fahrenheit.
    • I typically choose the slow cooker on high for an hour or two.

Freeze for Your Future Self

After shaping the meatballs, place meatballs on a baking sheet and put them in the freezer for 1-2 hours.

Once the meatballs are frozen, transfer them to a freezer safe bag or container.

Label them and enjoy for an easy future meal.
